Papa Deuce's BBQ Joint.... Come on in! We really talk about BBQ!

And a welcome season it is! DH made a pork shoulder on Sunday and it was great. He's been using the smoker a bit over the winter, but with warm days here it'll be most weekends now.

How about you? What's your first BBQ this season?

I did a pork shoulder last Tuesday, and will be doing a brisket this Friday.

Mmm BBQ. I am so hungry right now and I love ribs. A few weeks ago I brought home a doggy bag from Smokey Bones and ate it the next day for breakfast. :bitelip: Not the bag, the BBQ.
 
I smoked a pork butt 2 weeks ago and am doing ribs tomorrow. The pork was great, but I think I'll leave it in there for 12 hours instead of the 10 I did this time. I think that the meat would have been more tender on the inside had I left it the extra 2 hours.

Tomorrow, I am doing the ribs and looking forward to watching football and eating them!
 

Just thought I would dust this one off as spring is just around the corner....
 
I have a brisket that is all seasoned up and ready to hit the smoker on Thursday. And I'll be smoking a big pan of baked beans too.... ( small gathering that night ).... Feels good to see some nice weather coming. Supposed to be about 70 - 75 on Thursday, so time to get that smoker, smoking!
 
It was my wife's birthday yesterday, and she wanted "beer butt chicken" for her birthday meal.:) So, I was out there in 45 degree windy weather making her chicken on the charcoal grill. I threw on some soaked mesquite at the begining and it turned out perfect! I should have took a photo of it because it looked so good! And it tasted even better. :thumbsup2

Can someone please send some nice weather this way?! I'm on vacation from work this week, and we have overcast, drizzly, cold weather. :mad: :headache: Doesn't feel like "spring break" at all.

But I can smell the neighbors' grills going lately! Yum! :goodvibes
 
Good Job. Now show me a big plate of ribs preferably with a slightly hot sauce. OH and could you make it so the meat falls off the bone?
 
Jeesh, what is wrong with these people someone should have posted on this by now given the season! I even looked on the "What are you serving on July 4th" thread and no one mentioned smoked meats!
 
Honey Chipotle Glaze

¼ cup red onions, minced

3 ounces of OJ

½ cup chicken broth

¼ cup clover honey

2 tablespoons white wine vinegar

2 chipotle peppers in adobo sauce, minced ( found in Mexican section of grocery store )

1-tablespoon adobo sauce

Combine the onions, orange juice, chicken broth, honey, vinegar, peppers and adobo sauce in a saucepan stirring to blend. Bring to a boil. Reduce heat and simmer until the sauce has reduced to half. It should take about 20 minutes or so. Brush on pork or chicken the last half hour of cooking. Glaze every 10 minutes.


Sometimes I take the reduced glaze and give it a couple of quick pulses in a food processor, sometimes not.
 
Little bit of a brag here. I sent one of our DISers some of my sauce. Here is her non edited response:

WOW! That is some tasty sauce. We had a bbq off with ribs- one rack got the spicy the other the burboun- it was a split decision. I LOVED the Burbon and would pay for that sauce. It was so yummy. I was dipping in my ribs in extra sauce.

DH loved the spicy one- he said he thought it had a curry taste to it? I didn't know. But I liked that one too. But my favorite hands down is that burbon sauce.

So what's happening with the shop. I've been talking it up with my south nj friends. Any news?

I really can't thank you enough for that delicious bbq we got to have.

Tell me when you start selling so I can start buying.


Anyway, I keep coming up with new ones all the time.... I guess that I should write them down as I create them. One batch usually is not the exact same as the time before. :rotfl:
 
This week I am "building" a smoker made with a brand new metal trashcan and a hot plate. I saw it on food network, I think a long time ago. Pretty simple to do, and has a nice capacity.
 
Building a smoker from a trash can today... saw it on Food network and it looked like something I would enjoy.

I am going to my first Southern BBQ tomorrow. On St. Croix, we come from all over the US and one is having a BBQ tomorrow. He is from Georgia, and is talking up a big game. Another couple from Texas is also going to be grilling... I am excited haha. I on the other hand am bringing some Spinach-Artichoke Dip and Crucian Lime Pie.
