Pantry Clean Out!

Two of us had Hot pockets(I got the two packs for 99 cents) for lunch today. I had warmed up frozen chicken patty(was left from a previous week when my daughter wanted the encour chicken Parmesan but Walmart didn't have it so we just got some frozen pre-cooked patties to warm up and put our own Ragu on top) and made a chicken sandwich and some so hot cauliflower mix on side. That stuff is so addictive. lol My daughter begs for it. Lunches are usually find leftovers and I will get stuff here and there to have lunches. I'm mostly the only one that eats lunches from home. DD eats school lunch and my brother takes care of his own. Occasionally he takes something but he gets spiff/bonus money that he'll often keep for lunches.
 
Need to eat up the red and yellow peppers my DH bought. I wish he wouldn't buy stuff like that from Costco. We always throw some out!

So, tonight I am either making stuffed peppers or fajitas. Maybe I will do one one night and one the next.
 
We had a great weekend. Weekends are the hardest for us, as we like to get out and do things. This weekend the cold helped to keep us inside and keep us cooking! Went grocery shopping and spent only $60!. We meal planned and stayed on target.


Saturday's menu was:

Breakfast - Bacon, biscuits and gravy
Lunch - Grilled Cheese(kids), DW and I ate cheese and salami left over from a Christmas gift
Dinner - We made a healthy recipe using tilapia that had been in our freezer for a while, and Quinoa. We used this recipe: http://www.myrecipes.com/recipe/tilapia-with-quinoa-black-beans
It turned out so well! I couldn't believe how many of the ingredients we already had.

Sunday:

Breakfast - French Toast
Lunch - Tuna pasta (family), DW and I ate left over Tilapia
Dinner- Chicken Enchilades (my favorite, and I may have eaten more than one....)

Today:

Breakfast - Waffles
Lunch - Left over tuna pasta, I made a BLT salad(only 1 piece of bacon :) )
Dinner - Veggie Spaghetti

So far I've lost 6 lbs! The first week is always the easiest for me, then "life" happens...Gotta stay strong.
 
That was on my front patio. The school bus lets off almost directly in front of my house and kids used to trample through, climb our tree and mess around before going home. This neighborhood has issues. We've had our outside light bulbs stolen TWICE. That's why I say fence. We'd really like to get out of this place and find an actual house(this is manufactured in a park).
Ok, so this might sound mean....but we had a problem with neighborhood Kids climbing all over a BIG rock we have in the front yard. They would run across the yard too . I didn't have a big problem with them goofing around but they would leave their soda bottles and trash by the rock and one kid got hurt jumping off it and I was worried we would end up being sued. We told them to get off, even going to the parents of some of the kids, but they would keep coming over, so I bought some deer spray. It smells like awful and really strong cat urine and the strong odor lasts several days. I sprayed the rock, they all came over and sat down, then after a few seconds RAN away screaming. I kept spraying the rock area for a couple weeks and they have never gone back to hanging out there.

Yeah my brother cracked down on them often hollering at them or calmly telling them he doesn't want them playing/climbing the tree and now they rarely get in the tree but the loiter around and leave litter and trample through yard. Which wouldn't bother me if they didn't kick the rocks all over or mess with stuff(like the plant). He even put a store bought heavy duty No Trespassing sign on the tree. They ripped it off and tore it up. At least they stay out of the tree we didn't want someone getting hurt and involving court and stuff.

Good idea with the spray. HMM
 
Hi all! I'm loving this thread. I think I'm going to jump in here with you guys. Over the holidays I got away from menu planning and sticking to a budget. Now, my pantry is overflowing with stuff that needs to be used up. I took inventory of my pantry, fridge, and freezer. I did not inventory the kids' snack cabinet or my baking pantry. I kind of know off the top of my head what is in those already.

We are a family of four. My kids are 4 & 2. My four year old will eat just about everything but my two year old is in her "I don't want it" phase. Lol!

To start the week, I threw away a few items from the fridge & freezer that had expired. Then I made a ham and potato soup to use up leftovers. Used up some ground beef from the freezer and had cheeseburgers one night and then made the leftovers into cheeseburger pasta (homemade hamburger helper). Tonight we'll be having shrimp tacos (shrimp from freezer & tortillas from pantry). I also made a batch of pumpkin protein bars to use up a can of pumpkin from the pantry.

I'll try to keep a more detailed list of what I'm making/we're eating to keep track.

:welcome: My kids are 4 and 2 as well, but they are opposite. My 2 year old will eat anything you give her (except black olives and malt o meal) and my 4 year old finds everything "disgusting to eat." I feel your pain :)

Sounds like you are having a great start to cleaning out the pantry!

$93 for a week this time. Not my best but not too bad either. Included tp. $100 if you count our RO water from the water store. $10 was my brother's soda he sent cash for. And a few snack foods. Rest is dinners mostly a few lunch options for weekends and I do a lot of leftovers for my lunches. He budgets his own work lunches. I'm the only one that eats breakfast. I have to eat something with my meds. I may make oatmeal and get back into that. I do rolled oats with flax and chia and sweeten it with honey and a little brown sugar and cinnamon.

I made a list of sale meats(our 93% lean was 6.98 for two pounds...YES we splurge on this if possible over the less lean and very greasy stuff) (Oh and whole chicken 99cents/lb and 2.99/lb on roasts) and then decided the menu plan based on that. This was 7 full different dinner meals we don't often use leftovers as dinner again in the week so I need to learn to freeze some things so we can try them again later because biggest thing is nobody wants the same thing. But this week I had planned two meals at least off the whole chicken I bought. First will just be roasted with baked potato, baked beans and cucumber salad. Then I'll crock pot the carcass and make broth to make homemade chicken noodle soup later next week. I'm attempting freshly made noodles. Never done it but I do want to learn more scratch cooking on those type things. I like scratch cooking in general anyway. I do my enchiladas all scratch(the sauce) but I can't get the thickness of tortillas down so I usually buy store bought ones. I should practice and try again soon though.

I didn't have a lot already on hand so this budget isn't all that bad. One of these years we will get a deep freezer and try getting meats for the month(or bi weekly until we fill it up) from a local farm and then just get produce, dairy(what little we consume). I'd love to make my own breads but more so pasta is what use more. I keep wondering what the equipment for indoor gardening would be. Probably cheaper to put up a fence around back and try some raised bed garden outside maybe less traffic through yard would help keep kids out of it and allow something to grow out there.

I think I commented to somebody else a few days ago, but there are certain things that are 100% worth paying extra for. We are in the boat of paying more for less greasy ground meat as well.

Great job on figuring out a meal plan that utilizes your chicken twice! I think it's one of the most versatile meats to reuse in a whole new dinner.

Oh and I can relate to those of you with pickier eaters. My daughter is quite picky in some ways and others I have it easy. She will eat any vegetable except brussel sprouts and celery unless it has peanut butter. It's meats she gets picky about. She won't eat mashed potatoes. WEIRD because most kids love them. She's picky on breads too.

At least she's getting plenty of veggies :)

In the warmer months we grow veggies, herbs, and berries. I'm looking into getting some dwarf apple or citrus trees. We started with growing everything in containers. I didn't want to dig up a portion of our yard and then lose interest/have it not work out. We still do containers but we expanded and added a few beds last spring.

If you want to try growing in containers, I've had great success with tomatoes, carrots, broccoli, spinach, strawberries, bell peppers, zucchini/summer squash, green beans, peas, and cucumbers.

This thread inspired me to clean out my freezer and pantry. I have so much stuff in both yet I keep buying more every week. My DH is away for 1.5 weeks so I made a meal plan based on what we already have and I only need a few things from the grocery store so I am guessing I will spend about $20 at the grocery store vs. the $150 I normally spend. I just bought some Disney gift cards for our May trip so it will be nice to offset the cost of those!

Yes, I just got up from the freezer with a list of meats and veggies. How did I forget that there were perogies down there? When DH asked today, what do you need from No Frills, he didn't even flinch when I said nothing. Fruits and veggies will be all I need for most of the month. Even our milk and my yogurt is covered. :thumbsup2

I bet it feels so freeing to have such a short list of groceries needed!!

I did a container before and I'm fine growing that way but I got a nice start on cucumbers when my daughter was 4-5 and wanted to grow some stuff like they did at her school. When I moved container outside it didn't last a week before kids had smashed them.

This makes me so sad. And angry for you. :(

That's awful - I don't blame you for being hesitant to try again - as not only would you end up without the food but also down the cost of setting up the garden >:(

Another successful dinner in our house tonight. We were planning on hotdogs but I didn't get to the shop to get the hotdogs or the rolls - we have a local shop that would have been open but I don't like their rolls. So I switched nights tomorrow we were having quiche so we did that tonight and used up some small one/off veg in the fridge. I had been googling for quiche ideas and then incorporated it.

Shortcrust pastry - found in the freezer and still in date! yeah its been there a while.
Potato, broccoli (used the last little bit), corn (used the one ear left in the fridge and cut the kernels off), bacon (from the freezer), onion and mozzarella cheese (still left from when we made parmegiana a few nights ago). I also had a small salad with mine lettuce, tomato and last of the avocado in the fridge. Kids just had bigger pieces of the quiche which really was probably a bit more like a frittata as we had so many ingredients in it.

When I say we made I have also been successful with having my DS15 do most of the dinner preparation for the past week with my instruction and guidance to work on his independence skills and get him ready for a part-time job lol. We just have to work on his speed now that he is starting to get the idea of a few things.

I used to menu plan for a week to two weeks but did it inefficiently - I would just decide what I wanted and ask kids what they wanted and shop for it. This meant that most of the time there was not a great deal of overlap of ingredients and I would end up with a garbage can full of wasted food - but no more and I'm feeling pretty good about it :D

Great job on switching things around so that you still ate things from home! That quiche/frittata sounds great :)

Wow, that's awful. I'm sorry that the school kids keep destroying your garden. Is there any way you could put the containers in a garage or patio area closer to the house so they won't be able to get to them?

Yesterday's meals:
Breakfast- Grits & coffee for me, cereal & juice for DH, strawberry waffles with sausage, cuties, & mlk for the kids
Lunch- PBJ sandwiches, chips, & apples for everyone (we all drink water throughout the day)
Dinner- Italian wedding soup & grlled cheese sandwiches for everyone. The kids got mlk to drink.
Dessert- we each had a small brownie as a reward for finally getting all of our Christmas decorations put away. Lol

Today's meals:
Breakfast- grapenuts & coffee for me, cereal & coffee for DH, strawberry waffles & milk for the kids
Lunch- probably pbj's again
Dinner- Hoppin John (black eyed peas, rice, & bacon), broccoli (I'm all out of greens to put in the Hoppin John), and biscuits.

Way to go on eating 6 meals from food in your house!

I still haven't taken down our Christmas decorations. I like the brownie incentive. I'm making fudge this afternoon, maybe I should refuse to let anybody (including myself!) have a piece until we get it done ;)

Yesterday we had sausage stuff as we call it. Well my friends dad named it another 4 letter s word. lol Its just smoked sausage, potatoes(my friend used au gratin boxed but I like fresh better even though it takes more prep time) and broccoli. I fry my potatoes in coconut oil or butter first then add the sausage and steamed broccoli after those are browned up.

Tonight is our first meal from the whole chicken. Just roasting it. My brother will likely make a sandwich. I'll eat some breast meat as its cut off and maybe a wing with my baked potato and cucumber & onion salad(one item I had on hand). Debating on if I want to steam up some carrots too or not but will probably heat the baked beans(the can is big enough for two meals for us). I probably won't do carrots as it will be too close to tomorrows Cherry Pepsi pot roast. Leftover pot roast and ground beef will be seasoned again for tacos Tuesday. Wednesday probably homemade chicken noodle soup and Thursday will be either hamburgers or maid rite(as our hometown quad cities area call it, started that name in Iowa though) with baked potato wedges and baked beans.

Cherry Pepsi pot roast sounds yummy. What's in it?

Sounds like a great way of utilizing lots of bell peppers but still having two completely different meals :)

We had an abundance of bell peppers in our garden this summer, so when I noticed they were reaching their mark I cut 'em up and froze them. They won't work as a raw style bell pepper for salads, veggie trays etc that way. But they still taste great in soups, fajitas and such. Just a suggestion if you still have too many after your meals.

Wow, this weekend just ran away from me. Glad to see everybody is having so many successes with their pantry food usage and grocery budgets!

Let's see if I can remember what all we ate since I posted last.

Friday breakfast: Cereal (kids), husband and I both skipped :(
Lunch: Egg sandwich for husband, omelette with bell peppers and cream cheese for myself, packed lunch (pasta, baby carrots, apple, wheat thins) for son, scrambled eggs and clementines for daughter
Dinner: Crockpot loaded baked potato soup. I have no words for how delicious this was. The only thing I would change is pulling out both crockpots and doing a double batch next time ;) http://www.cookingclassy.com/2013/12/slow-cooker-loaded-potato-soup/

Saturday breakfast: Bacon and eggs (all)
Lunch: Went to MIL's house to meet my nephew :) She made a celebration lunch that included chicken enchiladas, Spanish rice, corn and homemade sopapillas.
Dinner: Kids stayed at my IL's for the night. Hubs and I had a date night (first in months!). Went shopping (had some Christmas exchanges and Kohl's cash to spend) and then went to Star Wars. Dinner was theater nachos and candy. Breaks the no out to eat rule, but it was a special occasion for us. I totally broke the law and ran into Target to buy the candy. Is it wrong? I suppose, but I paid $3 for 3 boxes of candy as opposed to the $14 it would have cost at the theater ;) And we got a voucher for a free coke with our theater rewards card, so we saved $5.50 with that as well :)

Sunday breakfast: Kids were at IL's and we skipped :(
Lunch: IL's brought kids back and also took us out to Cracker Barrel.
Dinner: Frozen pizza and frozen potato skins (both leftover from food items we bought when we watched a bunch of family before New Years)

Monday-We did left over pulled pork that we used as a baked potato topping
Tuesday- Long stressful day at work and I had forgotten to thaw anything out I caved and we got Big Macs
Wednesday-taco salads
Thursday- teriyaki beef with noodles
Friday- I got a $5 pizza on the way home because husband had taken leftovers to work for lunch and didn't leave us enough to eat on
Saturday- we unexpectedly ended up not being at home Saturday night so drive thru it was :(
Sunday- soup DH grandma made

Tonight starts new week for us
so here are the goals for this week
Monday-shrimp & grits
Tuesday- honey mustard baked chicken with broccoli & cheese
Wednesday, Thursday & Friday are to be determined but I have stuff for Lemon Pepper Chicken with rice, chili, chicken salad, and gumbo quick mix.

Cucumbers become better when a specific chemical is released from the stem & leaf into the flower before fruiting. This usually happens if the plant is overheated (kept in too much sun or high humidity for too long) before fruiting or if the plant is not thoroughly watered before fruiting. Cucumber plants take in a lot of water. Unfortunately once the plant turns bitter, you can't fix it. You just have to rip it out and start over. I try to plant the seedlings in late spring and keep them watered twice a day. That usually gives them a chance to establish flowers before it gets too hot.
 
Crazy day coming home from a weekend away . Managed to hold off the kids until we got home for lunch
And made 2.5 trays of enchiladas , some for dinner tonight and some for freezer meals for kids. Have brown rice in the slow cooker for tonight and to make some rice bowls. Threw some strawberries in the freezer that were past their prime , I'll use for smoothies later. Planning out the week tonight!
 
Soo...we are having McDonald's for dinner tonight. It's been one of those days where nothing went the way it was supposed to go and well, we ended up needing something for dinner. Oh well, such is life.

Today's meals:
Breakfast- grits for me, waffles with sausage, fruit cups, and milk for the kids, Cheerios & OJ for DH
Lunch- tomato sandwich & cutie for me, cheese sandwiches with apples & teddy grahams for the kids, DH at work
Snacks- hot chocolate for me, cuties, babybel cheese, chips/pretzels, fruit snacks, & milk for the kids
Dinner- McDonald's for everyone

My DH is traveling for most of the week so the rest of our meals will be more simple.

It's sooo easy to make... this is the recipe here from allrecipes.com I serve with rice and steamed veggies!
Baked Honey Mustard Chicken

• 6 skinless, boneless chicken breast halves
• salt and pepper to taste
• 1/2 cup honey
• 1/2 cup prepared mustard
• 1 teaspoon dried basil
• 1 teaspoon paprika
• 1/2 teaspoon dried parsley

1. Preheat oven to 350 degrees F (175 degrees C).
2. Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
3. Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving.
 
Ok so all set for the week. Spent $141.56 at the store BUT we are a family of 5 with 2 hungry athletes. And it included 2 perscriptions, shampoo and some things like that and the makings of food I have to bring in for 3 events for the kids this week :cheer2: so I'm pretty happy. Now here's hoping we stay on track! Trying the zucchini boats with some rosemary quinoa tomorrow night.
 
Ok I think we are pretty much set for another week also - I can't remember if I have said who is in our family (in other words who I am feeding) me (mum), DS15, DS11 and DD11. Today it cost $99 but I still have to buy some steak for one night - DS15 had a big request for STEAK one night lol growing boys and will do another small veg/fruit run later in the week as needed. I picked up some more chicken breast as it was still on sale - I probably don't need if for this week but come a weeks time I will and by then it will full price again - its in the freezer ready and waiting.

Tonight: twins had toasted sandwiches, DS15 cooked himself the hotdogs leftover from last night and & had the last of the quiche & salad.
Wed: Chow Mein
Thurs: Soft Chicken Tacos
Fri: Steak
Sat: Roast Chicken - There should be left overs from this so sundays or Mondays may change to make use of the leftovers instead or it will be for lunches.
Sun: Chicken Parmegiana - kids requested this as they loved it so much last week haha
Mon: Tandoori Chicken

We have been doing really well with breakfasts and lunches as well except yesterday we had subway as a friend was up to visit with her kids and we had been to the local water park and kids were starving and wanted food NOW lol I don't blame them they had just spent 2 hours running, climbing, swimming and throwing themselves off all the fun inflatables.
 
So has anyone else started a savings jar using the $ that you are saving by eating at home? We normally budget $50/week for eating out (that includes take out and delivery stuff). I started a Disney $ jar with our Christmas money and decided that each week I would add what was left of the $50 to the jar. Just more incentive to not eat out and my son is loving it. He's learning about saving and counting money. He got a piggy bank for Christmas and now wants a chore chart to start earning Disney Dollars.

We started putting $50 away each week as well! If I hit my weight goal, the prize money coupled with our savings could land us an impromptu Disney trip this summer...We will see how it goes. Great idea about a chore chart to start earning Disney Dollars, we may have to implement that. DD7 and even DS3 would get on board with that, I believe.

We did great yesterday, and at the 1 week mark, I've lost 10 lbs! DW has lost 7! I know not to expect the same results moving forward, but I'm pretty excited for the way the first week has gone with the weight loss. Tonight we will eat out, but our Wednesday night activities resume tonight at church, and we usually have dinner there. I don't feel bad about it, because it is really cheap for a family of 5! ($20)

Today's menu:

Breakfast - Oatmeal/Cereal
Lunch - Grilled Cheese for family - Left-Leftover Spaghetti for me
Dinner - Church (tonight's menu is Chili and Cornbread)
