I've heard that you can only make one ressie for this after you board, but when making the ressie for dinner, can you also make one for the brunch too?

Yes you can and if you check back after the 1st day, they sometimes have openings so you can get in for a 2nd dinner there as well.

Yes, you can make a reservation for dinner, a reservation for the champagne brunch, and a reservation for the high tea all while attending the initial reservations session.
