PALO dining hours

As it is getting closer to our cruise date all these new little questions keep popping into my head. Can anyone tell me what the serving hours are for PALO (both dinner and brunch)? Just trying to figure out what time to make our reservation for.

Also, how long does the "typical" dinner experience last?

I believe the last seating is 9 PM. That was the time we had last week. I believe it was close to 10:45 PM by the time my wfe and I left. It was really great. Our waiter was Louise and she was wonderful!!
