Palo Brunch vs. Palo Dinner

I'm looking into booking Palo for my upcoming cruise. I just don't know what the difference is between brunch and dinner at Palo. I have had dinner there before though, so I'm looking for more info on brunch.
 
We prefer brunch to dinner.
At brunch it is more relaxed, you can "see" outside the dining room, and you do not have to get as dressed up.
There are items to order off a menu and a buffet to choose from.
 
Do you still get the same "service" with a waiter/waitress for brunch? When we went for dinner, we went on Pirate Night and basically had one on one service since no one was there. I know that probably won't happen, but it was fun talking to our waiter during our dinner that night.
 

Since brunch includes a buffet I don't think there's quite as much interaction. We haven't received as much attention as you described, even in Remy for dinner.

As noted, the brunch is a buffet style. But you also have the opportunity to order off a menu for the entree items.
We've done both brunch & dinner at Palo. Yes, you get just as much attention from your server at both meals (if your server is doing his/her job). In fact, your server will walk you through the buffet area and explain all the offerings there for you, and, often, will serve you (that is, scoop up whatever you indicated you'd like onto your plate). If that makes you uncomfortable (as it does for some), you can ask to serve yourself.

After you've gotten your (first) plate from the buffet, your server will ask if you'd like to go ahead and order your entree. But it won't be served the entree until you're ready for it.

You also get a glass of champagne or mimosa with brunch.

Be sure to save space for the dessert bar.

And don't plan on eating a whole lot more that day.

Yes. Your server will take your drink and entree order (brunch includes a menu-ordered entree), and also lead you over to the buffet, where he or she will serve you the items you ask for.

I had the same great server for brunch and dinner during our December Fantasy cruise. I liked both meals, but preferred dinner, as the entree was better, and I really loved the chocolate souffle, which you cannot get at brunch.
 
We have done both brunch and dinner multiple times and prefer brunch. I find there is a wider variety of food I like at brunch (chicken parm is my favorite food on the the ship) and as previously noted, you get a beautiful view, not just darkness. Service has been excellent for both meals.
 
I prefer brunch to dinner as well. We were served by the same server at both meals last time. I enjoy the variety offered at brunch, and dishes in smaller portion allow me to try more food. I am not as impressed by the dinner menu. We are trying Remy brunch and dinner for the first time this August plus a Palo brunch on the Fantasy. Can't wait!

Orange juice. My sister and two of the guys who worked in her office got permission to join me on the Dream one time, but as they were on duty and in uniform, they were not allowed to drink. Our server gave me my sister's (and offered the other two), but they got plain orange juice.
