Palo and Remy Dinner First Two Nights?

I'm thinking of going to Palo and Remy dinner for the first two nights of my upcoming 7-night cruise. I'll be sailing solo, so there is no one else to consider in my decision making. I'd like to do the specialty dining early in the cruise, before the special menus start popping up in the main dining room, and before I start getting too stuffed from cruise meals in general, which will probably gradually happen over the course of the cruise.

Has anyone here ever missed their first two dinners at the MDR? I'm not swearing off the MDRs completely. Should I stop by to tell them that I will be there on the 3rd day? Will my table still be reserved even if I don't show up on the first two nights?
 
Sometimes, Remy serves a special meal, the small appetizer one, on the first day. I don't remember if it's at dinner time though. Also, I think if you book Remy or Palo for your first night, you can do another night at the specialty restaurant for a total of 3, instead of just 2.
 
We have done palo a few times on the first night because you are allowed to book it again later in the cruise. It’s usually very empty so you get great service and usually the officers are dining there too.
 
Your assigned table will be kept for you. However, it would be helpful to the serving team for you to notify the dining staff that you won’t be eating in the main dining rooms until the 3rd night, That way the servers won’t have to keep an eye out for your arrival and can focus on their other tables.
