Package bar v billed on consumption?

There will be 17 of us total (10 adults over 21) and the rest children.
What we need to know is do you think the package bar works better than being billed on consumption?
I am worried that they may not have the drinks that my guests want and will have to make do with what ever they offer us. It would mean having to go ask all my guests, which is a real pain. Some are heavier drinkers than others so will it work in our favour or not?
It's a difficult one, I am just wondering what other brides did, or are doing?

we have tried working out the numbers with the open bar and the consumption bar and for us it seems like the consumption bar might be worth it. an open bar for just beer and wine is close to $30 per person for our wedding and alcoholic beverages like wine and beer are $5.75 which means they have to have 5 glasses to come close to the $30 plus not everyone will be drinking. ours is a sunday daytime wedding so we are not that concerned with having liquor at the event.
we are still waiting to speak with the planner b/f we make our final decision.
but based on our numbers, the consumption bar makes more sense.
