I have the OZI code booked at Pop. Will I lose that code if I decide in a month to add dining and tickets? I priced it out on their site and it still gives me the rate but I can't pay for it right now. I have to wait for my taxes.

nope you should be fine, in fact I am doing the exact same thing, we can add tickets than dining as long as its done and paid for more than 48 hours before your trip.
