OT- Pancake puffs

If they spill, it sounds like you have the heat too high and are trying to flip them too soon. You also may have too much batter in the well. Turn the heat down, let the pan heat up longer and wait till the pancake is pretty much set before flipping. Also use a little more oil or butter in the pan before adding the batter & after.

The first batch of pancake puffs/aebleskivers had some sticking, but I expected that. I will need to use it a lot more before it has the same non-stick surfaces as my old pan (no, it's not for sale!), but I can tell that this pan will get there with use.

By the way, I've found that there are many recipes for aebleskivers and several different techniques for cooking them. I'm sure that they all will work well with some practice, but I'll describe the one that I've settled on, because it is so easy:

Heat the pan at a medium-low setting. Take about two cups of prepared pancake mix (I use Krusteaz Buttermilk) and add a couple of teaspoons of sugar. Mix it in and stir in enough cold water to make the consistency about the same as you would for drop bisquits. Don't overmix it and let it sit for awhile to rise a bit before you cook it. Put a little butter or margerine in each indent and add about a teaspoonful of batter to each indent (If you're new to aebleskivers, I recommend trying only three at once.) I then drizzle a little melted butter on the edges of each indent. After about a minute, I use a knitting needle (or chopstick) to turn each aebleskiver one quarter turn. I add a little more butter and then turn them so the round side is up. I keep turning them with a spoon until they're done. (You'll just have to break one of them open to check, because it's dependent on your batter and temperature.)

Once you get it down (usually after a few rejects), serve them in threes on a small plate with thinned out raspberry jam and powdered sugar. Once you eat them, you'll understand why people go through all this just to make a pancake that looks like a racquetball!
 
I realize this is an older thread, but I just got one and LOVE it! We have used it daily since getting it. My kids love the aebleskivers as desert!

Aebleskiver.com is coming out with an electric version possibly by Christmas of this year and I may want to get one! but I thought I would try the cheap version pancake puff from BBB. I am sold!

BTW: We have done both the pancake puff recipe and the "real" aebleskiver recipe from an online Danish site and we like both, but the boys think the aebleskiver tastes too "egg like." Mind you, I could be doing it wrong, but whipping 4 egg whites and folding them in does give more of an egg taste.

Last night we even spent some time talking about how aebleskivers came to be and about the Vikings, so it can be an educational tool as well!

It is NO HARDER than making pancakes or waffles in my opinion.

Too funny... we got one for Christmas, and we hate it!!! My parents got us the one from Williams-Sonoma, and it's an absolute PITA!! We can't get them to flip at all, they just spill and turn into a big blobby mess, it doesn't clean up well at all, and overall, hate it!! Maybe someone has some tips, cuz everything we've tried hasn't worked. We've tried using toothpicks, fork, spoon, etc... and nothing works.

We have this problem too!! I always burn the first batch because I get the pan too hot (I'm not patient enough). By the time I'm on the third or fourth batch, I've got the cupcake pan out to use the rest of the mix! Once I get them right, they're good, and my kids love them, I just need to get it figured out so it doesn't take me all night to sit there! Maybe my problem is because I'm using cupcake/cake batter instead of pancake batter?? But my boys LOVE the cupcake puffs with icing inside! :rotfl:
 
My son asked for and recieved this for his 5th birthday.
We love it (except the brownie puffs were kicking my behind):confused3 We made pizza puffs last night, and have made pancake and omelet puffs. I found it at Target, it as 19.99
 

What do you mean they were kicking your behind?

I decided to try the brownie ones tonight and they were a huge hit! I thought they seemed just the same as a pan of brownies for taste, but DH informed me that they were much better because they were small and had more crispiness on the outside and then were soft on the inside. I sprinkled powdered sugar on them. They loved them! :thumbsup2

So far, the only thing that didn't go over as well were the actual aebleskivers I made. Now, I assume that is because of ME and not because of the actual recipe! But, they were eaten anyway!

I am glad to read that I am not the only person who had problems with this. My son begged for it, I got it at Target, used it 3 times and each was a DISASTER. I was feeling like a big old moron reading everyone using with no problems!!!

I never did use the butter in the wells, so perhaps that was the missing step! Time to try again!!
 
My kids insisted on getting one of these. I finally broke down and bought one several months ago. I had trouble with it at first and then found the science to it. It's not easy to flip but eventually you get the hang of it. I haven't made anything else in them besides pancakes. Oh wait I did try stuffed pizza with cresent rolls. That didn't work out very well. It takes to long, too. They really didn't care for it much after the first batch of pancakes. So it's been sitting there unused for a couple months.
 
It takes time, more than reg. pancakes I think. YOu have to really wait until it is not only bubbling, but it is crusty around the edges. I flip it with the bamboo skewer, but it only flips about 3/4 of the way, so I have to poke the top and move it a bit once again to get it so that the cooked part is fully on top, if that makes sense.
