OT - Let's Share our best Holiday Cookie

Im really starting to get into the Holiday Spirit. :santa: Thought about trying something new this year, so I thought it would be fun to share our favorite Holiday recipes. Ill Start:

Almond Macaroons

Serving: 30
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

INGREDIENTS:
2 egg whites
3/4 cup sugar
1/2 tsp pure almond extract (optional)
2 cup blanched almonds finely ground (8 ounces)
1 tbsp potato starch



DIRECTIONS:
1. In mixing bowl, beat egg whites until foamy.

2. Gradually beat in sugar and almond extract, if used, until stiff, shiny peaks form.

3. Combine almonds and potato starch and stir into meringue.

4. On greased baking sheets lightly dusted with potato starch, pipe through large star tip or drop by tablespoons forming small mounds two-inches apart.

5. Bake at 350 degrees 18 to 20 minutes, until firm and lightly browned. Cool on racks. Store in an airtight container. Makes about 30 cookies.

These are so yummy and makes a good sized batch
 
Those sound yummy! The extent of my cookie baking skills is to get a tube of dough from the grocery store and cut it up and bake it. LOL :lmao:
 
These are so simple. I made these for a cookie exchange one year!

Buy the premade pie crusts (the flat kind) cut them into smaller triangles. Fill with apricot filling (found in the bakers aisle) and chopped walnuts. Close by pinching the tip of the triangle to the middle (base) of the triangle. Bake 10 minutes (watch carefully as times may vary). When cool, sprinkle with powdered sugar.
 
Oreo Balls/Truffles

Ingredients:

1 pkg. Oreos, divided
1 pkg. (8 oz.) cream cheese
2 pkg. (8 oz. each) Baker's Semi-sweet Baking Chocolate, melted

Directions:

Crush 9 of the cookies to fine crumbs (I use a food processor.) Set aside.

Crush remaining 36 cookies to fine crumbs.

Place in Medium Bowl

Add Cream cheese and mix until well blended.

Roll cookie mixture into (approx.) 42 balls, about 1 inch in diameter.

Dip balls in chocolate and place on wax paper-covered baking sheet.

Sprinkle with reserved cookie crumbs.

Refrigerate until firm, about one hour.

Try not to eat them all before you give them away.
 

Super Easy! Way faster than making cookies and VERY rich!

~50 unwrapped caramels (kids can do it--make sure you have extras!) Now they make carmel bits that are made for melting. It says on the back how to measure to equal 48.
8 1/2 Tbsp. Evaporated Milk
Melt milk and caramels over double boiler. Cool a bit while you do the rest. (I usually do this step while the oatmeal mixture is baking the 1st time.)

2 C Flour
2 C Oatmeal
1 1/2 C Brown Sugar
1 1/4 C melted margarine/butter
1 tsp. Baking Soda
1/2 tsp. Salt
1 1/2 C Chocolate Chips

Mix together flour, oatmeal, sugar, soda, salt and butter.
Pat 1/2 to 1/3 of the mixture (it'll be crumbly but you can pat it into a 'solid') into a 9X13 pan.
Bake @ 350 for 10 minutes
Immediately after removing from ove, sprinkle with choc. chips and then pour caramel over the top. I spread it all arround with a rubber spatula
Put remaining oatmeal mixture on the top and press in with a rubber spatula.
Bake @ 350 for 15-20 minutes more.
Cool before cutting.

Wow, so far so yummy!!! :)

I don't have one that I do every year, depending on time we buy premade dough and do it that way. I work full time and I've got a b-day girl in Dec (10 days actually) so time is tight in December. I want to try a few of these though.....YUM!!!! :)

One I do like to do is peanut butter cookies, roll them in a ball and then press a Hershey's Kiss in the middle. YUM!!!! I use premade dough for this one though....LOL
 
Easy Clothespin Cookies

3 packages Pepperidge Farms Frozen Puff Pastry, thawed
2 pounds powdered sugar
2 cups Crisco shortening
1 teaspoon vanilla
3/4 cup milk
7 oz. jar marshmallow cream

Cookie: Preheat oven to 450 F. Thaw the pastry and roll out on a lightly floured surface until it forms a 12"x10" rectangle. Cut into 1/2"x6" long strips using a pizza cutter or sharp knife. Wrap each strip around a "seasoned" clothespin
moistening slightly with water and overlapping the edges slightly. Bake for 5 minutes then turn oven down to 375 and bake for 10 more minutes. Carefully remove from clothespins and cool completely.

Filling: With an electric mixer on high speed, beat together sugar, Crisco, vanilla, and milk for 10 min. Add marshmallow cream and beat until combined.
Using a pastry bag, pipe filling into cooled cookies. Cookies are best if refrigerated .

These are a huge favorite of our family's. I usually make these for a cookie swap.

Anyone have a good gingerbread cookie recipe? My DDs LOVED them at Disney World and have been begging for me to make some. I bought some at Target (and paid $2 PER cookie (worse then Disney)) and they were too hard for them. So I am looking for a soft gingerbread cookie recipe!! :thumbsup2

Try this one - I got it off a cooking website a few years ago and it's worked well for me:

3/4 cup molasses
1/3 cup packed brown sugar
1/3 cup water
1/8 cup butter, softened
3 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground allspice
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon

Directions
1. In a medium bowl, mix together the molasses, brown sugar, water and butter until smooth. Combine the flour, baking soda, allspice, ginger, cloves and cinnamon, stir them into the wet mixture until all of the dry is absorbed. Cover the dough and chill for at least 3 hours.
2. Preheat oven to 350. On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut out into desired shapes. Place cookies 1 inch apart onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Remove from the cookie sheets to cool on wire racks.

These sound easy and delish!! Do you have to keep them refridgerated after you make them (because of the cream cheese???)

I refrigerate them, because they have cream cheese and they hold their form better because they get really soft when they aren't refrigerated.

Big Soft Ginger Cookies

2 1/4 cup flour
2 tsp. ground ginger
1 tsp. baking soda
3/4 tsp. cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
3/4 cup margarine
1 cup sugar
1 egg
1/4 cup molasses


Mix margarine and sugar. Add egg and molasses. Add dry ingredients. Shape into balls and roll in sugar. Bake at 350 for 10 minutes.
 
Not a cookie, but really good.

2 lb. almond bark
1 cup peanut butter
2 cups dry roasted peanuts
4 cups rice krispies cereal
4 cups miniature marshmallows

Melt almond bark over low heat. Stir in peanut butter. Pour over other ingredients and stire. Drop by spoonfuls onto waxed paper.
 
I just spent this weekend making 13 different kinds of cookies and fudge. It was a lot of work but I only do this once a year for all our nieghbors.

My favorite out of all of them had to be :

Toffee Crunch Cookies
1 cup butter
1 cup brown sugar
1 cup white sugar
cream together, then add
2 beaten eggs
1 teaspoon vanilla extract

combine
2 cups flour
1/4 teaspoon salt
1/4 teaspoon baking soda

Add in batches to above, dont over beat,

Add by hand
1 cup oatmeal
1 cup chopped almonds (use any nuts)
1 cup flake coconut
1 (10 oz) bag toffee bits

preheat oven to 350 degrees F

Drop by teaspoonful on to ungreased cookie sheets and bake for 15 minutes.

These were soooo yummmy I had to make 2 batches! 1 for me and 1 for the rest! :rotfl2:
 
I actually made some really good semi-homemade cookies this weekend. I creamed 1/2 a block of cream cheese in the kitchenaid mixer on high, added a pack of betty crocker peanut butter cookie mix with required ingredients (I think 1 egg, tbsp water, 3 tbsp oil- I used 2), then added a BIG handful of semi-sweet chocolate chips, rolled into balls, & baked til browning on top. SOOO good, they didn't even get to cool b/4 everyone finished them off.
