OT - Help! I have MOUNTAINS of leftover turkey!

Hey everyone out there, I need your help!

I need some good old fashioned leftover turkey recipies! I've got the standard turkey pot pie thing, but that's about it! My DD (9yrs) is fairly open to different things, but my DS (6yrs) is totally NOT into trying different things! He's not a casserole type of guy, lemme put it that way.
So lay 'em on me! Who wants to get the ball rolling?

How about turkey tacos or turkey quesadillas doing what you would for chicken quesadilla (shred the turkey) and add cheese.

you could also make turkey chilli - I don't have a recipe but you could google for one.

we have turkey soup and turkey pie here. not too many left overs this year as we invited 14 people to share the day with us.

We like good old fashion hot turkey sandwiches. The kind the diner's make.
Slice of white bread topped with turkey and smothered in gravy. I also make and freeze turkey soup. Yummy on a cold winter's night. We have also done turkey quesillas and turkey fajitas (kids love this one because they get to assemble it themselves) I have also added leftover turkey to fetticine alfredo.
