Thought this may come in handy for the holidays.

Someone recently shared this recipe with me, and I am eating one of the cookies now! ;->

Note -- I just added the 4 ingredients at one time, mixed well, dropped by teaspoon onto a non greased cookie sheet. I let the cookies bake until the tops were just turning brown. The doneness of the cookies will depend on your preference.

Beat 1 egg
Add 1 cup of sugar
Add 1 cup of peanut butter (smooth or crunchy)
Add 1 teaspoon of vanilla
Mix well.
Bake at 350 degrees.

Darn. Wish I would have read your recipe this morning before flopping on a double peanut butter cookie recipe.

Thank you for sharing. Will try it.

No flour?? I'll have to give it a try, thanks for posting.

Yes, I was doubtful too. (And shared this recipe with a gluten free friend.)
Honestly, did not miss the flour one bit. And thought it better without flour. (At least my cookies. I am not much of a cookie baker usually. But this recipe was so darn easy.)
I was almost expecting something fudgey. But just tastes like a peanut butter cookie. :confused3

Wonder how they would taste if some chocolate chips were added :scratchin

I thought about that. Or even adding a Hershey kiss on top. mmmmmmm

Just made these and they are good, I let them get just light brown on top, and they are chewy. :thumbsup2

The gal I got the recipe from got it from her MIL. She said sometimes her MIL substitutes cinnamon for the vanilla. And sometimes uses both.
This is a good, basic (and simple) recipe.
