We have done All Star Music (after that trip swore I'd never do value again), Contemporary, Grand Floridian, Animal Kingdom Lodge, and the cabins at Fort Wilderness.

Our family of 5 have stayed at AOA, Poly, CR, POR, and YC. We don't like food courts, so we've enjoyed the deluxe resorts the most. POR is really pretty and the smaller rooms can work. You just have to be organized and keep your things neat. If you want to see Yeeha Bob's show, get to River Roost a couple of hours before the show. We stood around for half an hour, looking at a table saved by a hat and a lanyard, while being ignored by staff. I booked the resort specifically to see him, and we left half an hour before his show because of the the previous. Oh well, our vacation was still a lot of fun.
Thanks everyone! This is helpful! It was so nice to be able to put the kids to bed and shut our door and prep for the next day, shower, etc. They were 7,7,4 during that stay. Next trip they will be 9,9,6. I just worry if we try a smaller room and it's too tight we'll regret it! I mean it's Disney, it can't be too bad... but my inlaws stayed in a standard room at AoA and that was tight!
As a family of 5 we have stayed at BC, BWI, and CBR. Cheapest options have consistently been CBR or POR. The value suites are pricey enough we'd rather splurge a few more dollars and just stay deluxe. Having 2 bathrooms really isn't a big deal for us though.
