I am going to the UAE and Thailand in Nov.
I am, of course, going to take my 7D and supplies.
I have the following lens:
50 mm 1.8
28-135.
75-300.
I am going to take the whole shebang. I just can't see NOT having my equipment with me if the situation requires.

We will be doing an Elephant "tour" which includes care, riding and some jungles treks.
I want GREAT pics to remember.

DO I "need" anything else?

My dad is a regular to Thailand (wish he'd take me), but not a photographer. From the photos he's taken with his little pocket camera and the stories he's told, you might consider a wider angle lens.

He visited one place where monks keep tigers. If they're in a good mood, you can sit right next to one and have your picture taken. They are chained to the ground. A very awesome experience if you can do it. Here's a link (think this is the one he visited): http://www.thailandhighlight.com/kanchanaburi-riverkwai/tiger-temple-riverkwai.html

He visited the site of the bridge over the River Kwai. Again, a wide angle lens would fit it all in the frame for some interesting shots. Same with the elephant tour.

In the UAE, you could get some interesting shots of the Burj Al Arab (inside and out) and other sites.

I don't have a wide angle yet, but am about to pick up the Canon 10-22 for my 7D. Check out Ebay as there are a few listed now. They run around 859 (B&H 824 I think). Also check out the thread on ultra wides...the pictures are amazing and fun.

Have a great time! I'm jealous!

We are doing both of these.
