Opinions on my dining choices?

Hi everyone! I'm currently trying to plan meals for my father/daughter trip to WDW in December...the week before Christmas (what are we thinking!?). I still have a month or so before I can make ADRs, so I'm still working on the plans. We're on the deluxe dining plan, so I've got a lot of meals to figure out, and it is a bit overwhelming trying to plan meals so far in advance. I'm hoping someone could look this over? Let me know what you think of the restaurants, as well as the schedule in general, please?

FYI, we are going 12/19-12/24 with 5 day park hoppers, staying at AKL with deluxe dining plan(and yes, we are skipping MK, which I know probably sounds weird lol)

Monday 12/19
Park: Hollywood Studios/Epcot
Breakfast: Boma
Lunch: Brown Derby
Dinner: Rose and Crown

Tuesday 12/20
Park: Universal
Breakfast: Las Ventanas/or other resort
Lunch: Leaky Cauldron
Dinner: Jiko

Wednesday 12/21
Park: Animal Kingdom
Breakfast: Tusker House
Lunch: Quick Service
Dinner: Wolfgang Pucks Dining room/somewhere else in Disney Springs

Thursday 12/22
Park: Epcot
Breakfast: Boma
Lunch: San Angel Inn(maybe?)
Dinner: Le Cellier

Friday 12/23
Park: whatever
Breakfast: Grand Floridian Cafe
Lunch: ??
Dinner: Spirit of Aloha
 
I think they look good. Personally we would replace Spirit of Aloha with the Hoop Dee Doo Review. SoA gets mixed reviews. HDDR is terrific. We also love Raglan Road at DS and would love to try The Boathouse.

Park: Hollywood Studios/Epcot
Breakfast: Boma Excellent choice
Lunch: Brown Derby Not a favorite of mine, but it is the best this park offers and it's really not that bad.
Dinner: Rose and Crown It's ok. Nothing spectacular, but just ok.

Tuesday 12/20
Park: Universal
Breakfast: Las Ventanas/or other resort
Lunch: Leaky Cauldron
Dinner: Jiko One of the best that Disney has to offer.

Wednesday 12/21
Park: Animal Kingdom
Breakfast: Tusker House Excellent choice, especially if you are doing this prior to rope drop
Lunch: Quick Service Flame Tree BBQ is my personal favorite
Dinner: Wolfgang Pucks Dining room/somewhere else in Disney Springs There are way to many other options that are really good in Disney Springs... Morimoto, Boathouse and Raglan Road come to mind.

Thursday 12/22
Park: Epcot
Breakfast: Boma A second time?
Lunch: San Angel Inn(maybe?) I personally love SAI, it is one of my favorite 1TS options in Epcot
Dinner: Le Cellier My least favorite signature restaurant in all of WDW... There are just too many other options such as Monsieur Paul in Epcot or better yet head over to the Boardwalk and try Yachtsman Steakhouse or Flying Fish.

Friday 12/23
Park: whatever
Breakfast: Grand Floridian Cafe It's a nice choice. If you like buffets though the Wave in the Contemporary is very good... One of the best I have ever tried.
Lunch: ??
Dinner: Spirit of Aloha I also would recommend Hoop Dee Doo Review as well.

My thoughts and opinions are in blue above. Overall I think you have some excellent choices; However as someone myself who has done the DxDP in the past, you may want to lighten up the load a bit on the restaurants. Going to three meals a day can take a lot of time and is a whole lot of food. I would recommend enjoying a nice breakfast buffet in the morning, snack during lunch and then enjoy an excellent signature restaurant in the evening... Another option on one or two of the days is grab a snack in the morning, eat an early lunch and then enjoy a signature dinner in the evening. Having three meals is a lot on the plan, especially if they are sit down meals.
 
You are going to eat some great food! For your bang for your buck with the deluxe plan, I would eat at Yak and Yeti for lunch on your AK day rather than a quick service. Yak and yeti is one of my families favorites!

We are going in July and we are a deluxe dining family as well. In the past we have always done the Wolfgang Dining Room, LeCellier, and aloha. We are trying some new things this year, we will see if we like them better!

We are replacing Wolfgang with the Boathouse, LeCellier with The Yachsman, and Aloha with Hoop Dee Do. I'll have to let you know if we like the replacements better or not! I would also highly recommend California Grill at fireworks time for that evening you were going to do aloha.
