Weird question for you...so you HAVE to schedule three FP, you can't just schedule two. I only want to ride two rides at Epcot plus breakfast at Akershus. I have a 3rd FP scheduled at the same time as Akershus because I had to schedule something. If we park hop to HS after lunch, can we make a new FP (if available) there? Does missing that 3rd ride at Epcot affect anything?

Once the third FP's window expires you can book a fourth FP, whether you used the third FP or not.

Yes. You have to schedule 3 FP+. Since you scheduled your third one for when your breakfast it will just expire. That will not afffect anything that happens after. You don't actually have to use the FP+. The time window just has to pass.
When you get to DHS go right to the kiosk and see what is available and at what times. The Studios don't have that many attractions, so be prepared to have limited choices. You probably won't get TSMM, but TOT and RnR might be possible. Good luck!
