One unplanned day - ideas for 2 and 5 year old?

We're looking for ideas of things to do our last day. We don't fly out until 7:00 pm next Friday and would like to make the most of our last day. We'll be doing Disney parks for 4 days, have 2 day of rest at hotel (DH will be at a conference) and then this last day. DD (5) loves rides (particularly roller coasters) and we have no idea what DS (2) will like (although it probably won't include sitting for very long). We've tossed around Sea World, IOA (did it last year with just DD and had a great time, not sure how it would be with DS) and US (have never done it with kids). We're also open to other ideas. One note: the high for next Friday looks to be in the upper 60's, so waterparks are out.

Any thoughts?

If I had to choose one I would choose IOA. We are doing all three with our 20 month old but figure she will enjoy IOA the most because there is just so much to see. The theming is great.
