Is it possible to do both parks in one day? We're trying to decide if we want to go on the last day of our trip... but we're not sure if it's worth it.

We'll have DS (11months) as well, and I don't ride 'rollercoasters.' So will this help to get through faster?

It is possible to do part of it in one day. You won't get a really good feel for it, though, when you are rushing around.

If you decide to both parks in one day, don't forget to utilize the shortcut from Universal Studios to IOA through CityWalk via the rear of The Hard Rock Hotel, which is in the rear of the old Nickelodeon Studios.
