One day out of park, which would you choose?

We are going Wed 12/1 to Wed 12/8. In the middle of our trip, I'd like to have each daughter have a special day, one to Harry Potter, on to Sea World, and one to BBB and a princess day. Trip wise, Sunday works best for us. I suspect Sunday might be more crowded at US and SW, also harder to get a reservation at CRT, then say Tuesday. Can anyone speak to this?

confused - each daughter - do you have 4 daughters? are you giving each one their own whole day? or is everything on Sunday.
 
I'm hearing that Sundays tend to be quieter at Universal but with Harry Potter coming in who knows if that will hold true. Be sure to check the Universal forums to see how HP affects things.

3 girls: 5, 9 and 11. All would happen on one day. I have my husband and mother in law with me, so 1-1 kid to grown up.

I guess it's anyone's guess on HP since there is no data to base it on.
