One Day at the Parks September 17th?

My husband and I are taking a 20th anniversary trip to Orlando, mainly to visit Discovery Cove and Aquatica - we have a vacation package at a Sea World Hotel. We'll be there 6 days and have a free day on Saturday, September 17th. We have some old, non-expiring park hoppers which we could use, but Greg is hesitant to do a Disney day as he fears it will be overly hectic. Do you think it makes any sense at all to make a one-day Disney trip and try to hit Magic Kingdom and the Studios, and then either Epcot or Animal Kingdom if time allows? We don't need to ride "everything", jut our favorites and the new rides since our last visit 10 years ago. We have no problem being there from open - close, but we don't want to feel rushed or wait in extremely long lines. Advice?

Also, we have the old plastic cards with our tickets on them from 2004. Can we use those at the gate, or will we need to go somewhere to convert them to magic bands?
