Is the Once Upon A Time castle show going to be cancelled? I've read in some places that it's staying with the new fireworks show, but there is no schedule available for it past February.

1. No. It's still "new."
2. Lack of "advance schedule" is the "new normal" for WDW dates.
Nobody likes it, but that's just what's been happening over the last year, or so.

I think it will be going away because this summer there will be a new firework show replacing wishes. the new show Happily Ever After will incorporate the projection technology so I don't see them using both shows. Also if they introduce a new firework show this year, I'm not sure that there would be a new one for the 50th anniversary in 4 years as previously expected, it will make Once Upon A Time irreverent.

On the Disney Parks Blog, the blogger who posted about the new fireworks show, said that it wasn't going away.
