Once-a-Month Cooking, Anyone?

Is a great resource. They publish menus each month with a shopping list and directions on what to do on your cooking day. They have a diet menu, whole foods menu, etc.
 
I did this a few times many years ago when we still ate meat. Now we are vegan it seems less useful. We try to eat a lot of raw or fresh vegetables - I don't really care for the texture of cooked frozen vegetables.

My MIL's weekly menu included a big Sunday dinner of pasta/homemade sauce, a roast, veggies and potatoes. Leftovers became 2-3 meals later in the week. When I had a 1-1/2 hour commute (each way), I always cooked on Sundays for the week, even doing prep work like grilling veggies and browning ground beef for another meal entirely. It does make life easier during the week to have a few quick meals.

UI can't see cooking for the month, though. Our schedule changes too much - everything would end up in the freezer.
 

Fix, Freeze, Feast = LOVE, LOVE, LOVE :love:

Bought this book on Amazon and for the last year and a half, my neighbor and I get together about every 4-6 weeks and "cook" from this book. It's really more food assembly like Dream Dinners at home, but you get to choose your own recipes/meat, etc. The book uses "tray" sizes from the warehouse stores in the recipes, and most are stored in ziplock freezer bags. Almost all of the recipes are great!

Also, check out http://www.crockpotgirls.net/ . We have adapted a few of those recipes for freezer, and most are delicious.

What I like to do are put boneless chicken or steak or pork chops in a freezer bag and add an appropriate sauce, then freeze. The meat marinates and it's easy to thaw and throw on the grill or in the oven :)
 
I tried Once-a-Month-Cooking ONE time. I about killed myself. NEVER AGAIN. I could barely move the next day, and the kitchen was a wreck. It was such a bad experience for me - I didn't even enjoy the meals.

I am also a fan of "FIX, FREEZE, FEAST", Or should I say The Warehouse Gourmet, which was the authors' first book (mostly the same recipes, but has pictures). Both books are great!!!

Now - I do about 2 different recipes per month from F-F-F, and have a nice selection of stuff to choose from. Since it is usually just 2 of us, (DD is usually working) we usually get 2 meals per entree.

This is one of my fav recipes from the book: Cheesy Chilada Bake (in case any of you are interested what the recipes look like)

Even if you want to cut the recipe down to 1-entree - the math is super easy. (I just take a post-it note, and write down the 1-entree amount) and put it over the "3-entree amounts.
