Onboard activities

We are really interested on our next cruise to take part in more onboard activities like wine tasting, Mixology, beer tasting, etc or whatever other things that are offered. When and how do you book those? Do they full up fast? Also, does anyone know if there is a list anywhere of these kind of things listed online that are offered onboard? I know they will be on the navigator.
 
They are not listed anywhere other than on the navigator. Mixology could fill up as it's a bit fun. You book them at guest service.

Note that no kids are allowed...

Just got off the Wonder. DH and I booked the Mixology class soon after boarding for a class two days later. It was $15 per person and we loved it! They also offered wine tastings, beer tastings, tequila, sparkling wine and a food and chocolate pairing (i think). I lovvvvved spending time alone with my DH in our class. For anyone who likes to drink even a little bit, I would recommend a class. DH and I rarely drink but still enjoyed it. There were peope in this cass and on our cruise who REALLY like to drink. Frankly, I was surprised by the amount of drinking on our cruise but that is another post!

Is there a schedule when you board when all the different classes will be? I know they are listed in the daily navigator but how do you know what will be going on the the 2nd or 3rd day?

You just go to guest services and tell them you'd like to sign up for the mixology, martini, etc class and they will tell you when they are. They should also be able to tell you what other similar classes are available and when those are as well. You will sign up then, your account will be charged for it, and you will receive tickets for the class(es).
 
When I went to GS to register, she gave me a print out of the schedule, sort of like a spreadsheet of the class, day and price. So, you might be able to ask for the complete schedule also. In our Mixology class, there were about 30 people there, maybe a few more. On the Wonder, it was held in Cadillac Lounge. I actually registered for two different times since I wasn't sure what day we'd actually like to attend and also in case we liked it so much that we'd want to do it twice! I asked the CM about the cancellation policy and she said to cancel at least one hour prior. We liked it but decided not to do it twice so I canceled the second reservation one day prior to the class. Yes, you are charged and given a paper ticket. We thought it was very fun and well worth the $15/pp fee for this particular class.
