I have read review after review of people saying the sauce at Mama Melrose tastes burnt. At first I was thinking, eh maybe it's just spicy. But now I'm starting to get concerned considering the Fantasmic package for a family of four ain't cheap (paying out of pocket). At this point I'm thinking we'll have to avoid anything that comes with it.

I'm not sure about the sauce tasting "burnt", however I will say that Mama Melrose is just kind of "eh" to us. It's not bad, but it's not great either. As long as you're not expecting an authentic Italian meal, you won't be disappointed. Compared to the limited choices for TS at HS, it's really not bad.

Food is decent to good, considering the choices available we eat there 2/3 of the time and the other 1/3 at BD.

I don't recall the sauce tasting burnt, but I wasn't wowed by the meal, either. I'd do it to get the F! package though.

We tend to stay away from any Italian red sauce at Disney except for the Italian restaurant in Epcot. Even our kids won't eat it.
We have eaten at Mama Melrose but order dishes that will not have any tomato sauce

We also stay away from pizza at WDW for the same reason but I am excited to try the pizza at the new Via Napoli

We do not use jarred tomato sauce like Prego, Ragu, etc. I tasted it once and that is enough for me and that is what the sauce at Mama Melrose and Tony's Town Square tastes like.

We either jar our own tomato sauce, from fresh tomatoes, or buy good quality can tomatoes which of course still have to be cooked and seasoned.

Just my 2cents
