your lineup of meals looks great... here are my thoughts...
unless you have your heart set on Spirit of Aloha, you might want to reconsider and go to the Hoop Dee Doo instead... my kids loved it... at 8yo ds laughed soooo hard he literally fell off his chair! that deep belly laugh will live in my head forever!
as far as splitting sit-down meals... we never tried it, but that doesn't mean you can't do it... the only restaurant on your list that you could split at is lecellier... the rest are either buffet or "all-you-care-to-eat" which cannot be shared...
you can, however, split counter service meals... and we did this quite often...
for breakfast we found that if we got the "big" breakfast platter and paid for a bagel out of pocket and used a snack credit for a big bowl of grapes, we had enough food to feed three of us (ds got the sausage patty on the bagel, dd got the eggs and biscuit, i got the bacon and potatoes and we all shared the grapes) and dh got his own meal (some of which we might has snagged LOL)
for lunch we found that two meals could typically feed three of us or three meals could feed four of us... in mexico/epcot we got two combo platters and an order of nachos and everyone was satisfied... at caseys in magic kingdom we split three hotdogs/3 orders of cheese fries/3 sodas and 3 brownies and all went away stuffed!
salads also went a long way 'cause ds would eat all the meat/cheese on top and i would eat the salad part...
at pizza planet we were able to feed four of us on two pizza/salad meal deals which included dessert...
at our resort food court, two CS credits were used to buy a big 16" pizza and two sides which more than fed our family and gave us some pizza leftovers for the next day...
we also took our dessert from sit downs in doggy bags (can't do this at buffets or all-you-care-to-eats) and had them for breakfast (teehee, don't tell my mother! LOL!)
snack credits can also be used for "breakfast" if you like mickey krispie treats!
