On principle alone, I shouldn't give you advice. Since the Hawkeyes won this weekend, I'm in a good mood.
Anyway, if you want to watch from the restaurant, 8:30 p.m. (Depending on the time of the year, get there about 15 minutes early.) I would request a window table when you make the ressie and when you get to the podium. If you aren't a huge party, they can accommodate you. Don't let them rush you through your meal--personally, I have never had this problem, but others have--when you get your appetizers and salad be sure to mention that you need a few minutes before they bring the rest of the food. They will get the hint.
You should be wrapping up with coffee and bread pudding or paying the bill when the show starts.
That is what I would do, because you are almost guaranteed to hear the music.
If you want to watch from the beach--also cool--I would go for a 7 p.m. or so ressie. Not much later, if you
need to get out quickly you will be seated late, food will late and paying take forever...if you've got extra time there is plenty to see in the lobby/shop/pool and stake out your seats. Sit more to the right--as you look at the castle--the view is obstructed by the dock.
BUT, I've never been able to hear the music outside. I'm told it does work sometimes. The fireworks are still neat to see, but I like hearing the music with it better.
OH, and I believe the EWP is at 9 p.m., don't miss that.
