Ohana breakfast - timing for characters?

We’re planning to book Ohana breakfast for our next trip and are wanting to grab a later time slot - is there any concern with missing characters if we do this, or can we expect characters to be out through the latest seating for breakfast? (Specifically, if I grab an 11:50 time, can we still count on getting the character interactions?)
