OFF DAYS?

planning an 8 night trip for April 2016 and planning 2 off days during that trip from the parks, what would you do on those days?
I have a temporary itinerary as follows:

Day 1 Sat: Arrival day, DTD for dinner and Quest
Day 2 Sun: Hollywoood Studios
Day 3 Mon: MK Day
Day 4 Tue: Animal Kingdom
Day 5 Wed: no park day
Day 6 Thur: MK Day
Day 7 Fri: Epcot
Day 8 Sat: No park day???? Maybe
Day 9 Sun: hoping for very late flight to go back to Boston so may have park time on this day

PS: I do not plan on buying the park hopper option, I purchased this last trip and never used it.
 
Similar to us, we have planned 2 off days as well. We are doing 2 days, off day, 2 days off day, 2 days.

Assuming you have 8 park days as well if you get that (ate flight, I would do your 1st no park day a bit earlier. Break it up a bit more. Off-day suggestions:

One our first "off" day, we are going into Old Town late afternoon. We're going to do the Old Town Portrait Studio, go to the bumper cars and check out the car show. (something I'm sure your DH and if you have any boys, would enjoy).

The next off day, we are going to see Hoop Dee Doo Revue at 4:00. We're also doing the World of Citrus Swamp Safari tour that morning. Reviews are great. It's a u-pick citrus farm that also offers 1 hour swamp tours, upon a Monster Truck! You can also stop and hand-feed cattle etc... Get to see wild animals etc... You can get great deals on Groupon or Living Social (is that the name?)?

There's also a great park called Kelly Park in Rock Springs. They have a nice natural lazy river. You can go tubing down the springs, it ends in a swimming area, there's a park area with BBQs, place to picnic, a playground etc...

You could go to a beach, though the nearest ones are 1+ hour.

You could also look at doing a water park - though those can be just as exhausting as a park day.

For us, our "off" days are mostly for relaxing and enjoying the pool. Anything we do is going to be close by and just quick things.
