October planning question

We'll be at Universal/IOA the Sat. and Sun. of Columbus Day weekend. We're buying 3 day passes and saving the extra day for next year. I plan to buy the Express Plus pass and need some advice. My 8 year old is tall enough and willing to ride anything. The 4 year old is pretty timid and won't ride anything that will get you wet, so that eliminates a lot of stuff. I was thinking DH and DD8 could use my and DD4's coupons to ride the biggies twice. Is this possible or do they have to be used by the same person?

Should we:

A: buy the one day Express pass for each park. If we do this, does anyone have any suggestion as to which day (Sat. or Sun.) is best for which park?

B: buy the combo Express pass for Saturday and then do the non-Express rides on Sunday. My concern here is that w/it being a holiday weekend and the parks closing at 5 pm, will we have time to use all the Express coupons at both parks in the same day, especially since DD8 and DH will be riding things twice? We've done both parks in one day in the past, but closing wasn't til 7 pm, plus we've added 4 very popular rides to our plans now that DD is tall enough).

C: do the more economical thing and spend Sat. at Disney (we have APs) and Sunday only at Universal/IOA. We'd have 2 days left for next year and maybe the hours will be more favorable.
