Disney is aware of the buffet regulations in the US according to our server but chooses to buffet the food without ice or heat. We were also told that the inspection was also of the engineering spaces (from the VP of engineering to my ear) and ship legal documents,certificates etc. The escorting CG sailors were waving to passengers throughout the ride. Very interesting stuff about Palo's. My parents had 11:30 ressies that day for brunch and while they enjoyed it very much, my mom thought it was strange that it wasn't a buffet. Their server brought out plates of chilled items and they then ordered a meal from a menu. We had never been on a Disney cruise before, so had nothing to compare the experience to. Is their buffet usually displayed on ice? It's surprising that Disney would be unaware of that regulation.
