Disney doesn't publish nutritional information. But I'm moving this to the Disneyland board in case someone there can confirm. Sometimes Disneyland must do things differently from WDW because of California law.
Unfortunately Disneyland doesn't have published nutritional information for their food. If you need to discuss (or avoid) specific ingredients, you can ask the chef at the sit down restaurants, can ask the CM at the counter-service restau rants, or you can go to City Hall and request ingredient information. What you will not find however, is caloric information that you'd find on a nutrition label (calories, fat, protein, etc.). It's a bit of a bummer, since I am a big calorie-counter, but unfortunately it's just not something they offer.
