Given Disney's importance to the local economy, I don't see the state forcing them to disclose anytime soon. Based on the shocking data released by national chains in recent years, it is probably safe to assume that WDW's non-healthy dishes are similarly frightening. Many of the healthier options probably also have things that you might want to avoid (dressings, etc.). But Disney is typically good about responding to requests motivated by health concerns -- gluten intolerance, diabetes, etc. Obviously, the more upscale the restaurant, the wider the options.
Interestingly, you can go online and find the ingredients for Dole Whip, which is a vendor-provided product sold outside of WDW. If you like Dole Whips, don't look. Some of the ingredients are practically unpronounceable unless you are a chemist!
