To answer your questions:
1.-FEs: There will be a list generated with all the participants listed and their locations. Usually, the group sets a "final date" for joining because some people make their FEs and need to have a total. As to names, are you asking if it has to have your name or their name? It's all up to you! I usually put a sticker that says Nanatink & Sulley on the baggy. I don't put each participants name on them, though many do. It's a matter of preference.
2.DIS Meets: On the cruises I have been with other DISers, there is usually a big meet on embarkation day before the lifeboat station drill. then there might be others during the cruise....very fluid and open.
3. Dining Rotation: That is usually assigned. I do know that some people have apparently cracked the code to getting their choices, I have never tried because I'm fine with whatever. We have second dining. As this will be the first cruise we have on the Fantasy, I don't have a favorite restaurant, really. Well, there is Palo's and Remy's on the Dream was fantastic, but that's about it!
Yes, there are a lot of Disney-obsessed people. I find it hard to really meet up in the parks...I don't 'see' others while I'm there, especially if I'm with my family. I find it works better for me to set up a meet BEFORE I go, otherwise, it won't happen!

On the ship....I'm pretty much one of three places, Poolside (adult) with a book and a FAB, in Cove Cafe with a book and a cup of tea or coffee, or on my verandah with a book....yeah, I read A LOT on board!
