I am not sure what days you are doing what parks, but i looked at a couple days during your time frame -- there is still quite a bit for dining reservations - just looking at the 13th for dinner there are still plenty of reservations. So this late in the game there won't be the hot reservations BOG etc, but still some great options - Epcot i am seeing Biergarten which if you haven't tried is a fun place for kids, coral reef there is the huge fish tank. Boma, Sanna and jiko at AKL, kona cafe at poly which was very good when we ate there, mama melrose at HS, Wave at poly. So there are reservations to be had, just might not be the character meals you were hoping for. Your absolute best bet is to book reservations now aligning with what parks you plan on being at. Then when your FP times open up -- work your FP around your dining times. If you at least book something now you can cancel if something happens to open up last minute even when you are there.
My planning steps are to get loose plans of which parks we want to do on which days. I try to look at the touring plans website and gather an idea of which parks might be at a lower crowd level. Then at 180 days book the dining that we would like - i'll sometimes book a couple reservations at different parks and then cancel what i don't need as we firm up plans. Then knowing what parks we will be at i then plan a flow of the parks -- print out a map from easywdw pick what FP we want and space them out so that we have time to wait in line at rides we want to hit in between FP. The last thing you want to be doing is to be on one side of the park and then have to trek to the other side for dining reservations. The touring plans website (for a fee) does offer some planning help where you put in your desired rides, dining and shows and it helps to formulate a plan for you. might be worth look into this. You can always figure out some plans and then post to disboard -- it can be helpful to get some feed back from some disney vets.
The best thing to keep in mind is to relax, enjoy your time with your kids and soak up the magic.
