Not visited in a while .. need updates

We have not visited WDW in about 3 years. Last time we had 7 day tickets. We stayed in a value resort 1 night ,then a condo in Kissimmee. We need a kitchen and laundry facilities.We were able to reserve fastpasses and dinning reservations by just staying 1 night for the entire 7 days. Is this still possible? I can't really remember the process.
