We have done moderate and deluxe at WDW. Frankly your experience is less dependent on the type of families that stay there (mixed in all cases) than what the resort has to offer, and the atomsphere it offers it in. For example we went to then Dixie Landings with our extended family there was lots of casual stuff for the kids to do, great pool, playground, fishing etc. The eating hall could accomodate all types of kids, my then 2 year old's melt down was barely heard over the drone of the rest of the room.
On our recent trip we stayed at GF, lots of restaraunts for us parents, not much to eat, or a comfortable place for the kids. We stayed in concierge so that helped on food. At Dixie Landing rooms opened tot he outside so no hallway noise to worry about. At GF kids had to stay quiet in halls. GF worked for us then because it was our immediate family, and the kids, being only 1 and 4 were too tired to do anything after the parks.
While we try to be considerate of the other guests, we really don't pay attention to them so the potential snob, or the reverse, doesn't factor.
We are going again next October and will split between Poly and AKL. The reasons are the then to be 6 year old wants to stay on the Savannah and see the animals, MMNSHH at MK, the then 2 year old loves anything Polynesian and I want to eat everything at the EPCOT food festival. When the oldest hits her early teen years we'll go back to moderates and get two rooms, i.e. two bathrooms. WDW with teenage girls is always an experience.
OP, bottom line don't worry about everyone else's family, just do what makes your family happy, really look at the anemities of the resort and decide if you'll use them, if not don't waste your money.
