We are planning on purchasing the dining plan for our trip. One member of our party will only be staying 3 Nights out of our 7 night trip. How does this work with the dining plan? Will I have to pay for the full 7 nights for him and then split up his extra remaining credits and use them for the rest of our party?

When buying a dining plan, it also makes it a package, all people in the same room must be on the same package.

You will need to purchase the dining package for the first night of the package till the last night, for everyone staying in the room. If a guest leaves early, you can just use the credits. All credits for the room are pooled together (however, they are separated between child and adult credits)/
