I've never understood what this meant. Is it one time only or one time to Joes and one to time Mary etc?

The answer is not accurate to my Nook though. I have only owned it a month, but currently I have 2 books out to my sister on Lend Me, and she returned the first from the series of 3 which I then did a lend me to my mother, so she has the first book of the series.

I have also lent the same book out to more than one person.

It's only able to be lent to one person at a time, but I haven't not had issues in lending it out after the 14 days to someone else.

Nook owners, is it possible to tell before you buy a book if it is lendable? I have a Kindle but I'm interested in finding out what publishers allowing this. I tried looking the a couple of Nookebooks and didn't see it in the description...

Yes, on the b&n website, lendable books have an icon next to them like this:
