Capellini With Asparagus and Shaved Parmesan

4 cloves garlic, unpeeled

3/4 pound uncooked capellini (angel hair pasta)

2 tablespoons olive oil

3 tablespoons fresh lemon juice

2 1/2 cups low-sodium chicken broth

2 bunches asparagus, trimmed and cut into 2-inch pieces

10 large basil leaves

2 ounces Parmigiano-Reggiano cheese, shaved

Lemon peel for garnish (optional)

Heat a large nonstick skillet over medium heat, then add the garlic. Toast, turning the cloves as the peels char, until the garlic feels soft when pressed, about 20 minutes. Remove from pan and let cool.

Meanwhile, cook the capellini according to package directions. Drain and transfer the pasta to a large serving bowl.

Slit the garlic peels and squeeze the garlic pulp into the skillet. Add the oil and mash the garlic to blend. Add the lemon juice and bring to a boil; boil for 30 seconds. Add the broth and asparagus; bring to a boil and cook until the asparagus is just tender, 4 to 5 minutes.

Stir the basil into the asparagus mixture, then pour over the capellini. Toss to combine. Serve with cheese shavings and garnish with lemon peel, if desired.

Make 4 servings.
 

Capellini Pomodoro
Serves 4
3/4 lb organic cappelini or linguine Pasta, cooked al dente
2 tsp organic extra virgin olive oil
2 cloves garlic, minced
1 large tomato, chopped
1 cup basil, chopped
1 cup chick peas, canned, rinsed
1/4 cup Asiago cheese, grated
1 TB organic balsamic vinegar
1 tsp sea salt
1/2 tsp pepper

Heat olive oil, sauté garlic and tomato for 2 minutes. Add basil, chick peas and reserved pasta; sauté 1 minute. Add all remaining ingredients and combine well.
 
OMG, I had NO freakin idea there were so many using their noodles around here. :cool1: People after my heart. I think I have a crush.

I don't know that I've eaten many noodles at WDW. Let's see, I've eaten spaghetti at Tony's Town Square. That was pretty good.

Spaetzle so nice of you to come by! Damn sorry I missed ya. You didn't stay long, I hope that Rigatoni didn't rub you the wrong way. You know how some Noodles are. :rolleyes: They'll bump into you when you least expect and then stick to you like glue.

Fusilli, such a scary avatar for such a silly noodle. Whassup with that?

My favorite noodle dish at WDW is the spaghetti and meatsaballs at Tony's and the tomato basil PENNE pasta dish at Olivia's!

My little noooooooonull (that's how she likes to say it) is ready to start her day.

Guess I better make like a spiral noodle and roll away for now. :)
 
Howdy! Thought I'd drop in for a little noodle action. What a weird dream, Penne. I think you should get it analyzed by a professional! :rotfl2:

Anyway, I'm loving the recipes so far.

Here's a macaroni one I was raised on ... very easy and basic. My mom taught me so there are no measurements.

Macaroni, boiled and drained
Tomato soup
Colby cheese
Thyme

Mix macaroni with soup and thyme, until it tastes right. Salt for flavor, too.
Layer mac with slices of colby cheese, ending with cheese. Bake at 350 until cheese is golden brown and edges are bubbly.

I used to love the noodles that they served at O'Hana's, but now they've replaced them with fried rice :(.

I once started a thread over on the Dining board asking where the noodles went and got quite a response!

Not to sound boring, but I absolutely LOVE the Fetticini Alfredo at Afredo's in Epcot....but that's the ONLY thing I like there cause besides the snooty(stick up the butt) waiters, I usually stuff myself with pasta and NEVER have enough room for those awesome looking deserts :sad2: :p
