Breakfast foods are easy - most if not all of the pastries at Main Street Bakery are snack credits, including their yummy fruit turnovers and very good blueberry muffins.
For later in the day, I believe the side of chili and side of fries at Casey's are both still snack credits. My son loves to combine the two and call it lunch
The place in Liberty Square has fruit and corn on the cob, as well as baked potatoes, and all were snacks last I checked (the turkey legs never were, BTW; they're considered a counter service entree).
The side salad at Pinnochios is also a snack credit.
I've never been there and I'm not sure if it is open seasonally or what, because it keeps making my list to try but I never seem to find it when we're actually in the park, but there's supposed to be a place in Adventureland to get egg rolls as snacks.

ETA: I'm no use for AK information; the only non-ice cream snack we get there is the jalapeno pretzel from the stand near Kali River's exit. I seem to remember a stand near the entrance that had muffins and such where we grabs a breakfast-bite for our toddler with a snack credit, but I'm not exactly sure where that was or what it is called.
