Non Park trip

My husband & I were supposed to take a cruise to Canada this fall but that seems to be off the table now. So we decided to try a non park trip using our DVC points. We are staying 4 nights at SSR and 3 nights at AKL. We're planning on renting a car and are trying to come up with things to do in & out of the World. We thought we could do miniature golf, horseback riding and if amphibians if those are available. We are looking at visiting Flights of Fantasy airplane museum, a small local railroad museum and possibly a day trip to St. Augustine. Does anyone have other ideas for things to do in the area. Also ideas on restaurants outside WDW & Disney Springs I would appreciate it.
 

Sea World, Universal, Cape Kennedy, Various Dinner Theaters, Ifly Orlando (indoor skydiving)
 
Lake Eola in Downtown Orlando is a neat place to visit. There is a large population of wild swans, and you can rent swan paddle boats. There is a nice walking path and lots of restaurants in the area. Pair that with a visit to the Orlando Science Center (of you have kids) and you'd have a fun day.
 
Town Tavern in Celebration was very good with great prices and selection.
 
On property, I would suggest:
Rent Bikes at Ft Wilderness
Hike the trails around Ft Wilderness
Rent a boat at Boulder Ridge and go out on 7 Seas Lagoon
Mini Golf
Shopping day at the outlet mall & Disney Springs
Kennedy Space Center

Also good food near DW is Miller's Ale House
I also love to eat Cuban/Puerto Rican while in FL - so check out Yelp

Enjoy the resort and take advantage of the things that are non-parks!
