Non-park recreation ideas for 7 and 15 year old

We will be at WDW for 8 nights over Christmas. However, we have decided to only do 3 park days. We are hoping to get some pool time in but the last time we came down in December it was freezing. Looking for some fun, non-park ideas in case the weather is chilly. This is going to be more of a laid back trip and we don’t plan on doing too much of a strict schedule!

There should be plenty to do if you’re staying at a Disney Resorts Collection hotel! Be sure to check the My Disney Experience app and the info boards across the lobby. The resorts have tons of activities like Movies Under The Stars at night (weather permitting) featuring different movies on some nights. Lots of arts and crafts available to enjoy indoors too (some may require some additional moolah). There are also plenty of arcade games in most resorts.

If you’re a bit more apt to roam around the resort area, why not pick a few different restaurants from outside your resort? The water taxis and Disney Skyliner are an attraction all their own.
 
I have recommended to others to do the Gingerbread Crawl!

They also have the Christmas tree Scavenger Hunt at Disney Springs.

Both of those are fun! Take a picture at each and then when you get home, create a puzzle from the pictures!!!
 

We enjoy going to see the horses at Fort Wilderness. We also really enjoyed the smore's at our resort, they had some really fun activities going on at the pool in the evening and they show a movie at night which looks like fun.
 
Our youngest turns 7 during our trip. Looks like the minimum age for archery is 7. He would love that. I assume that as long as we wait until his birthday or after he would be able to participate?

I can’t speak for Disney, but I’d agree that as long as he is actually 7 years old when you do it, he can participate!
