Non-Park Activities?

We are heading down to Orlando in July with roughly a hundred families for our kids' dance competition, and our schedules are likely to be such that we would have very few "full park days" available during our week there. I have been asked (volunteered to some degree, as the recognized WDW addict) to help make some suggestions for things to do if you only have a few hours rather than a full day. Taking the theme parks, water parks and mini-golf off the table (have already provided those ideas), what else do you like to do when in Orlando and not in a theme park? It is safe to assume that most of these people will not be staying on property, but would be willing to drive to a resort if it was worth the effort. Open to family ideas or adults-only ideas (with this kind of group, babysitting is pretty easy to get). Can be Disney-related, but doesn't have to be. Thanks -
 
you could go the outlet mall.
you could also go check out the Disney deluxe resorts.
Go to the boardwalk on Saturday night and watch the street performers.
 
Also from some of the resorts (at least MK and Epcot resort areas) you can rent boats of varying sizes from a 2 seater up to a pontoon.

We (my family...not the whole group) are staying at Beach Club and are looking forward to exploring that whole area more, as we've never stayed over there before. Is Saturday night "bigger" than other nights, or is there some sort of entertainment outside pretty much every night of the week?

They have entertainment every night of the week. The boardwalk is just beautiful at night and they have food, carnival/midway type games, and then of course the performers.
