Non fast very calm rides at Universal Studio Parks ?

OK we do not do roller coasters.
We like shows and slower rides like at WDW - Pooh, Peter Pan, It's a Small World, Haunted Mansion, and Soarin

So what rides do you think we would like at Universal Studios & Hogwarts ?

Should we always just do WDW and skip Universal ?

I would skip. There are a few shows you could do and take the Hogwarts express between the parks or a few things in Dr Seuss, but that's it for "calm" rides.
 
If you’re interested in Harry Potter- go! While ride opportunities will be limited, the experience can’t be beat. Plenty of shows, snacks to try and things to explore. You’ve already done Disney- try something new! :)

No.

It would be like asking Disney to sell a ticket to see only Fantasy Land within Magic Kingdom.

Both Potter areas are within each park..........

If you don’t know the Universal Orlando parks well check out the layout of the parks on the website. That way you can also check out what rides are in both parks and either google them or check out YouTube and see if they’re suitable for what you and your family want.

My huband doesnt like rides at all and he loves universal! Theres plenty to do, especially if you like harry potter. Make sure you get a park to park ticket so you can ride the train.
 
I love Universal. I disagree about there being plenty to do. Unless if by plenty you mean sight seeing, because if you enjoy simply looking at things (and people do, I'm not disrespecting that) then the sights are great. But as far as actual attractions, or activities the type that you are comparing to? Not many. Cat in the hat. ET (and even that has some jump scares), Jurrasic park centre. Storm force acceleration. I'm really scratching my head to think up any more.
 
All of Seuss Landing is fine.
Since you like Soarin, I think you can handle Jimmy Fallon, Despicable Me and Simpsons. If you can handle Dinosaur at AK, you can probably handle Spider-Man, Transformers, and Skull Island: Reign of Kong.

In Harry Potter, if you can handle one small drop and screens, Gringotts isn't that crazy. Forbidden Journey tends to make people sick, but it also kind of feels like a more intense Soarin (it'll turn you on your back). The Ollivander's wand experience is great though There are also several shows between the two lands as well (Frog Choir and Triwizard Spirit Rally in Hogsmeade, Celestina Warbeck and the Tales of Beedle the Bard puppet show in Diagon Alley). You can take the train between the parks both ways- each direction is its own experience.
There are also several shows in the parks: Animal Actors, Horror Makeup Show (very funny!), Sinbad, Fear Factor Live, Blues Brothers, and a few other small acts scattered around mostly the Studios side.
