But the Disney rep said he thinks he can modify my original AP reservation to a regular rack rate and add it that way. Is that true? I'm afraid if he's wrong I'll end up with NO WHERE to stay!!
Hmm.... I'd be afraid too. My understanding is that if there is no availability in the correct inventory (one that qualifies for the Dining Plan), then you cannot switch a reservation to include the Dining Plan either.
If you do try this, and it works, please let us know, since that will change a lot of the advice given here on the DIS regarding the Dining Plan.
We'll be there that week; my understanding is that the All-Star Resorts are full because of the Pop Warner Cheerleading finals.
I stayed at POP last October. The resort was fully booked. A few days before I arrived I called to add dining. My original reservation was room only. They had to cancel my reservation and rebook a package with a different reservation number. The CM put me on hold and had to check. The resort was sold out but they were able to make the change. Makes sense that Disney would be willing to accept more $$$ from a customer.
I paid rack rate. Keeping your room while changing to a package and keeping a discounted rate are two different questions.
Bicker there is inventory for promotional dining; AAA, free dining and codes. AFAIK there isn't any inventory for rack rate dining. Disney is always happy to take our $$$. The question is when Disney has to cancel a room only reservation and then book a package. There appears to be a way to book the room as a package even if the resort is sold out.
You'll have to purchase a one day base ticket. Do you have an AP discounted room rate? Losing a room discount and having to pay for a park pass you don't need may wipe out most of the savings you'll get from the DDP.

We don't have tickets yet. (Except I do have a five day kids pass I was going to use for my 6 year old DS) We were going to buy an AP to save on the room. There is another family going with us, so we were going to use the AP to save on both rooms.

2~ Everyone on the reservation (all people in the room) get THE SAME package (same # of nights dining, same tickets) I dont think there is any exceptions. Meaning that if you buy a 1 day ticket for one, its a one day ticket for all (for the package) I think
OP is trying to make a change during a sold out week. Normally
1) You can add DDP to a AAA discounted room rate that's booked through a AAA TA. Many of the Disney codes have an alternate code that allows you to add dining. Generally only the room rate is discounted.
2) Once you check in, individual family members can generally upgrade their passes.

Also just FYI there are threads on the resort board about those dates being convention dates, and that the companies blocked rooms but will be releasing some once they have final numbers on who is actually coming.
