There are also a couple of Jr. Suites at the Coronado Springs Resort - which is a mod, but very nice. You might take a look to see if one comes up for your dates. Otherwise, I'd book 2 rooms.

Garden suites only hold 4. One bed upstairs and a pullout downstairs. One bath and its upstairs too.
