No Brainer - 7 Day Ticket instead of Four

While we will be there 7 days, we had really only planned on hitting the parks 4 days, and a waterpark one day. But, it's only about $15 more to buy a 7-day ticket with 6 plus options. Is this as much of a no-brainer as I think it is?

The longer you stay, the more you'll buy OTHER things.
Its in Disney's interest for your party to stay & play longer.

I think that's what Disney is hoping you'll think. One other option to consider. If you plan another vacation is to look into the 10 no expiration option tickets and spreading the cost over multiple vacations.
 
Sometimes it is worthwhile to buy days 6 or 7 on an expiring pass just to get the additional water park fun visits, even if the park days go to waste. Meanwhile if you are going to visit only one water park once, or visit Disney Quest once with no water park visits, a separate admission for that is better than Water Park Fun unless you get non-expiration on your park pass.

Compared with the 7 day non-expiring, the 10 day non-expiring gives you three more days for $25. apiece.

If one pass covers at least two vacations completely you are getting a great bargain. If it takes two leftover passes to cover a third vacation, you are usually still getting a bargain but it is quite small.
