NO ADR? Is it doable?

We are headed to Disney from Nov 3 to Nov 11, staying two days at POP and seven days at WLV. We will have a small kitchenette at WLV, so will do some eating in the home. We will eat breakfast in the room every day.

Our plans are to eat a big lunch while in the parks, etc., and probably just eat something lite for dinner. The only thing I am debating is Hoop De Doo or Luau at Poly for a reservation, once I figure out park hours.

So, is going without any other reservations doable? What would you do? We don't need fancy restaurants and will not be doing character meals.

Whatcha think? I am up for ideas.

I went two years ago without any ADRs and we ate at Tony's and Liberty Tree without a wait. This was also in June. If you really want a certain place, I do suggest ADRs
 
I really don't think you'd need ADR's for much of anything in early November. That is quite possibly the least crowded time of year at WDW. If you do decide on going to HDDR or the Luau, I'd probably make ADR's for those, since they can mail you your tickets right away.
 
Sounds like you are totally flexible so it is definately doable.
