Well Ratatouille is based around food. From what I took from Tom Fitzgerald is they wanted to pair it with a restaurant like they did in Paris.Epcot - The Magic of Possibility : One of the speakers parallels the Crêperie de Paris with Rémy's restaurant at the exit of the Ratatouille attraction in Disneyland Paris. Not clear to what extent the story will actually expand into the restaurant, however.
