Assume I book and pay for a trip online or over the phone for an onsite, dining plan, park hooper package... what are things I could be charged for after the vacation is over and I go to check out?
In our last two trips we were not charged for anything extra. If you put your credit card on your room key then you should know what charges you are allowing.
So the local taxes for hotels etcare in the original amount you are quoted. Then if you just carried cash for souvenirs, tips, etras and didn't charge anything to your rooms you wouldn't have any check out day surprises?

Yup! That's what we do. Too easy for us to just "charge" stuff and forget something and end up spending way more than we planned to spend. Most people probably don't have a problem with that, but we know that we do so we just carry cash, disney dollars, and gc.
Initially I didn't put charging priviliges on our cards because I didn't see a need for it. But, in order to do express check-out (don't have to go to the desk) you must have a credit card on file. So, toward the end of our trip I went to the desk and added the card on so we could just pack up and leave without going back to the main building.
Everthing is taken care of at check-in. If they do not ask you, tell them to disable charging on your KTTW cards. Otherwise, the only thing you would be charged for are 'usages', such as internet, in room movies, pizza delivery.
Yes, our package is paid for in advance; however, I do have a credit card "on file." I decline charging priviledges on all of our ID/room cards.
We've never had any other charges come up so are just free to leave on check-out day.
I suppose items that could end up on the room would be internet use or any long-distance phone calls from the room phone. Other than that at a value resort, I don't think there is anything else that would "appear".
